This feature is available in Ametys 4.9 and higher.
The evaluation export function can be used to generate a CSV file of the evaluations present on a course.
Access to this report is subject to the "Generate evaluation extraction" right, available in the "Training offer - Steering" group.

From the Component tab

From the "Advanced" tab of a course
Find the generated report
From the Steering tab, click on the Search button in the search criteria to display the CSV report.
To download the CSV report, double-click on the report or click on the Download the report 
(Actions group)
The downloaded report is in zip format and contains a CSV file of evaluations by course.

Once unzipped, the evaluation export table looks like this:
